As a practical matter, make these 7 days rather than 5 days. the shift between
the work-week and the release schedule will cause problems both for devs and
testers.

Personally I'd like to branch before Christmas so that we can use the
free time for building images (it takes about 8 days and ~2TB of space
to build all targets and all packages).
how big is the build farm? how much hardware would people need to donate to
reduce this significantly (1-2 days for example)?
