Assuming your using vhosts and ledgersmb-httpd.conf for each install you could change the rewrite rule the install that you are taking down.
I would think you could change a line like: RewriteRule ^/ledgersmb/?$ /ledgersmb/login.pl [R] To: RewriteRule ^/ledgersmb/?$ some_temp_message.html [R] > Apache config is not my forte.
