Revenues don't equal profit of course - you have to buy all the stock etc, whereas TV revenues are pretty much straight profit.
Plus Bates sold off / outsourced the catering operation to a third party for a fixed fee. It was actually one of Cellino's best acts to bring that back in-house so the club can maximise profits. He can get some things right!
