Just a thought, perhaps you have already pursued. Lower mandible (jaw) and scapula (shoulder blade) will give you alot of flat material, with minimal porous material. The pelvic bones upper ileum (wings) also have alot of flat surface with alot of mass, with minimal porous material. If you can find a rendering plant, or local butcher shop. Give the boss and low man on the totem pole one of your turnings and you'll be set. The pelvis is usually sawed up while making sirloin and rump roast, however alot of times the jaw and shoulder blade are boned out.
