Hope I have understood this correctly. Try this:
1. Go to an individual with a photo (or add a photo to someone)
2. In Family View with the individual highlighted, click the photo icon
3. Look for a button that says "Edit." Click it.
4. At this point, you should see the following fields you can edit / change:
Caption
Date
Desc (Description)
Date
Is this what you want?
