Now that I think about it, you may be able to get what you want by doing a Detailed Search for Wildcard Equal To ?*. I say "may" because it depends on the type of Note you want to count. If you want to count Event-Notes it will not work. If you want to count General-Notes it will give you a list of individuals with a General-Note and the title bar will contain the count.
