I just did it.

Created a  new database with George a male and Frank a female set them
as husband and wife.

Then Export the Database to a Gedcom.

Then with a text editor find the individual with the incorrect sex, here
Frank went from female to male.

Save the file.

Now import the GedCOM into a new database.  Each time you run into this
you will have to export out of legacy, make the change and then import
back into Legacy.

There are ways to directly edit the Microsoft database, but for most
this is not recommended.

Now when you open the database the Married GEORGE and FRANK both males
are correctly identified.
