I scan pics to TIF with good resolution for archiving purposes. Before I link them to Legacy, I resize them with a lower resolution JPG format and save them to the c:\Legacy\Pictures folder . For most uses 200-300 dpi is plenty.
If you're planning on doing wall charts you might want to consider using the TIF file for the picture you'll be using in the chart.
