Is there a particular reason you want to go back? After making a gedcom of your Family File(s), you will have to uninstall Legacy then delete the files in the c:\Legacy folder - being careful not to delete any of your saved files such as reports, pictures, etc.
Then install the previous version of Legacy over that. You can't go back to a previous *build* of v7.5 - those are no longer available, only the final builds of previous *versions* of Legacy are. That is v3, 4, 5 and 6. The gedcom will lose your SourceWriter sources (moot point if you're going back to a previous version since SourceWriter was introduced in v7) and history list and the dates added and modified will be changed to the date you import the gedcom.
