Click the square blue icon, then double-click the items you want to add to the ribbon. They will appear in a line one after the other at the top of the Choose Special Characters windows that you have open. If you change your mind, delete that string of characters or some of them and continue until you have 8 or less.
Anyway, when you have the ones you want, click on Return Characters, that will close the window and you should be looking at the characters you chose in the little sidebar, the one with the blue icon at the top of it. The 'change' button is probably that blue icon.
