Unfortunately you can't change the column headings, but the list will be sorted in the order you select.
If you create a report, the report will be in category order but it's not in grid format - it's in a format with each To-Do item on its own page. You can Filter as well. Let's say you want to just work with Census To-Dos. Click on the Filter Options tab and select the Census category.
