Always in color, especially for old photos and the like. It is easy to
edit down to gray scale if need be. Starting with gray scale, you can
easily lose/confuse detail, making retouching a lot harder. I generally
scan at 2400 dpi for important images, but then I have use of a canon
color copier that cost more than all the cars I've owned together.
