Did you get any replies to this, Mary? I don't recall seeing any, and kept your post so I could reply when I had the opportunity (having been away a few days this week).
My main thought with reading your query was to wonder if you had seen that you can edit a sentence definition for a one-time use, ie for that one instance of an event for that one person? When you have an event open, look for the "Sentence Override" tab, alongside the Notes one. You may find that useful in some of your situations.
