And beware if you use the event on a marriage... only one spouse's name is used.

Yes, the list of available fields are the only ones you can use.

I think there may be grammatical problems with your suggested sentence
but I am sure there are grammar experts on the list better qualified to
comment on that. One thing to remember about the HeSheFirst or
FirstHeShe fields is that You have no control over the sequence of when
a name or a pronoun will be chosen. That depends entirely on the
sequence of events because the choices alternate for every event.
