Have you looked closely at the default marriage wording screen? There is
a default wording for not married (first and subsequent relationships)
for those where the spouse is both known (ie. is a real person with a
name) and unknown where nothing has been entered for the spouse. Did you
try deleting the wording on that screen for those unmarried cases?

If you meant that there are a lot of people with unknown spouses where
you need to change the this couple did not marry setting for them then
you can build a search list for those with unknown spouses but you will
have to edit each marriage to change the this couple did not marry. Go
to Search > Find and select the Miscellaneous tab. You can search for
everyone with an unknown spouse.
