I do not think the order process sets any default sizes. The only
"default" is that sizes extend in 1 foot increments for the selected
roll width.

Your other questions are aesthetic and only you can say what is too
compressed or too spaced out. If you want to see the full size you can
expand the chart and there is a zoom indicator in the lower right, zoom
until that is at 100% and your monitor should show the boxes and
contents close to the final size.

Yes if your chart is 33 in then 36 in wide paper would be the minimum.
