As far as hiding birth dates, it doesn't matter anyway since living people's birth dates are available online and at some websites for no charge. I found my marriage record image online and I'm not dead yet. I also found other living family member's documents. I know for Virginia many vital records include images and the ones that don't just list the data.
I do not export living people at all via GEDCOM to online which prevents any information being posted. Without a name then the identity thieves have to do some work to get the information. I know it's not that hard to find living people's information online, but why include them in our trees in the first place. The only one I put is myself because I am linked to DNA results. People worry too much about someone finding out how old they are. Who cares anymore especially when companies are selling our information? I've removed it from public sites and they just put it back so I don't bother anymore. By the way, I've had my identity stolen many times and it wasn't because of a family tree. Last year it happened three times and I take every precaution there is and it still happens. It's hard to avoid the skimmers who walk past you and collect your credit card information. What you can't see can hurt you. I just watch for people with backpacks or briefcases walking too close to me because that's where they hide them.
