Bill,
If you delete the Data folder from the Documents folder, it will
simply be recreated. It holds the Sample file for a start which can be
very useful to see how someone else has entered data or to use for
trying things out or just to see whether an error is related to your
family file or the program.
In Legacy Options - Customise at 1.2 you tell Legacy which data file
to open when you open Legacy.
At 6.1 you set your default data folder
At 6.2 you set your default media folder (if you use sub-folders, then
the top media folder - eg mine is set to D:\Cloud\Dropbox\LegacyMedia\
It works fine with the settings in one place and the data in another.
It's designed so that you can keep your data and your media wherever
you like - but it has to know where to find the settings. Legacy has
chosen not to hide them in \User\...\AppData\Local\... but in a more
readily accessible folder for most people.

Bill,
You'll find that the _AppData folder you've copied will just be a backup.
Legacy requires that folder to be at
...\Documents\Legacy Family Tree\_AppData\ folder and if not found, it
is recreated with the defaults.
That is the folder that will be updated every time you use Legacy.
This folder includes your settings some of which include paths which
are unlikely to be the same on both computers anyway.
With your data folder in Dropbox, do check for conflicted copies.
Unless you are careful to wait for upload and download to occur on
both computers when changing computer AND don't have Legacy open on
both computers at once, you'll get conflicted copies.
Unless you have very good stable fast internet, it's better to save
your backups to Dropbox rather than keep your family file there.
Howe ver, if you've got good internet and a little pat ience, it works
well to have your Data in Dropbox.
