You can change your start person (Options - Set Startup Family).
You can unlink your grandson from his paternal ancestors if you want to - that makes them a separate tree within your family file. Both I think are preferable to making another family file which is probably what you mean by "a separate tree." But if you really want to export them to another file, you can go to his father and use Advanced tagging - Ancestors - Entire Ancestor line. That will just tag your grandsons paternal tree unless there are more links between the branches than his parents. His mother will also be tagged as part of this but you shouldn't be.
You then export the tagged group to a new Legacy file.
That doesn't remove them from this file.
