Ian,
I haven't seen that screen. Cookies are used for all sorts of things. Some functions of a site won't work without them. I suggest you decide for yourself. No doubt each category comes with a blurb to explain.

Cathy, having deleted cookies from my Edge browser (I had cookies for 3 different FMP sites, and there were different types of cookies in each) - I searched within Legacy and when a Hint page at FMP is opened, FMP politely asks what cookies that I will allow. What would you suggest?

Aside: I often have several browser _pages_ (my browser calls them windows) open, each with multiple _tabs_. It may be necessary to check the Settings > Cookies for ALL pages.

You need to clear the findmypast cookies in your browser.

If you don't know how to selectively delete cookies, you'll need to delete all cookies - which means you'll need to sign in to all sites again.

In your browser settings in the Privacy section you should find where you can view all the cookies. It normally has a search option and you search for findmypast and then delete those cookies.
