Unlink the child from both "parents" then. with the father and correct mother displayed, right click in the Children area and select "Link to an existing son/daughter."
If you don't know who the child's mother is you'll need to create a new unknown partner for the father. I'm not sure how you handle it if a single man is adopting child.
