As far as I know, there is no setting to de-activate the automatic population of the surname field with that of the father.
With Scandinavians, the problem is not that they changed "surnames", rather that they did not have them until after the turn of the century. The approach that I have chosen, is to enter both the given name and patronym in the Given name field and use the Surname field for gaard names. For those individuals who moved around, I enter each name in the AKA. This also serves as a nice way to know where a person lived. As long as the father is identified with the correct gaard name in the surname field when a child is entered, the correct "surname" will be linked. For those in my database who lived in town and did not have an associated gaard, I still use the same approach, except these individuals have no surname. The only down side that I had found with this approach was pre version 5, when searching the marriage list, but now that there is an option to sort on given name, that issue has been resolved. As for an easy approach to repeat the data in a field from the previous entry or viewed record, position your cursor in the field and click on the identifier name for that field. This works for all fields in the Family view. For example, if you have just entered a location for birth, christening and burial in a record, when the next record is opened to the individual screen, clicking the word "in" in any of the location fields will populate that field with the data from the previous record.
