Make a backup.

Are any of the categories that you added being used? The first step would be
to change these to one of Legacy's default categories.

Once you have done this, I would then purge any unused categories.

At this point you should have a subset of Legacy's default categories.

Now, just create an empty database. Then import the default categories from
the empty database into your real database.

I haven't tried this but I think it should do what you want.
