If I do not yet know their married maiden name. I add "married" to the surname so I know that it is not the maiden name and when I find the maiden name I change the name to the maiden name.

So the wife to John /Brown/ will be Jane /Married Brown/ .

The convention that is most often used is to enter a person's birthname
in the surname field. Doing otherwise will cause confusion when sharing
data with others. Married names (and any other names) can then be
entered in Legacy's AKA field.
