I once made a couple of UML diagrams and committed them to lejos\docs\uml folder in the products cvs repository. Yet, they were for leJOS 3.0, so they are most likely to be outdated by now.
p.s. the tool I used was ArcStyler (http://www.interactive-objects.com/products/arcstyler).
