Most interactive systems have far more functionality than most users will

Imo, Leo does pretty well in this regard.  Everything (in the core) is 
undoable.

Afaik, there are no undo gotchas as in Blender.

Two bugs involving refresh-from-disk may have the most potential for 
burning users:
