I've also had a lot of problems adjusting colors in themes. One thing I discovered is that the presence of the node with headline "@data qt-gui-plugin-style-sheet" has font and color settings that make the desired changes when none of the other settings - the ones that are supposed to work - have an effect.
I copied mine from one in leoSettings and put it ahead of my @theme tree. I don't know why this has any effect, since from its name I wouldn't think it would affect Leo's primary settings.
