STEAMED CLAMS WITH CHORIZO
 
2 tbs. olive oil
2 pkgs. 3.5 oz each chorizo sausage, sliced
3 cloves garlic, minced
2 bay leaves
2 dozen clams
1 cup dry white wine
1 orange, halved
1/4 cup chopped parsley
 
Heat oil in large stovetop casserole or Dutch oven.* Add chorizo, saute until browned. Add garlic and bay leaves, cook 1 min. Add clams and wine. Squeeze orange juice into pan, then add halves. Bring to a boil, cover and steam 5 min. or until clams open. Place on SERVING PLATE. Sprinkle with PARSLEY and serve. Makes 4 servings.*
