SQUASH AND PEPPERS
 
2 yellow squash, sliced
1 red bell pepper, cut into strips
1 shallot, chopped
2 tbs olive oil
1 clove garlic, minced
1/4 tsp southwest seasoning
 
In skillet,* cook squash and bell pepper and shallot in oil 4 min. or until golden. Add garlic and seasoning, cook 1 min. Place on SERVING PLATE. Makes 4 servings.*
