how do i setup shell, e.g. bash, to enable input of non-ascii symbols?

could anyone suggest me a good console text editor with good support for
unicode and (user-definable) syntax highlighting?
NOT vi/vim or emacs 'cos i'm sick of dinosaurs like these. i like pull-don
menus much more than learning all thatugly keyboard commands ;)))
