I don't understand why you don't like extended partitions, but your distro, ... ! The only sensible advice I can give for partitioning is: work out what you will use the box for. From that you can take a reasonable guess at how much space you need (e.g. on my boxes I mostly make the '/' partititions 3GB which suits my desktop apps but doesn't give enough space to build OOo). I like room for a *lot* of systems, other people will want to use most of the space for /home.

Also, think about disk speed - the front of the disk is fastest, but sending the heads back and forth across the whole disk won't help. Depends, of course on the difference in speed across your disk - you could try putting some partitions on it and testing how hdparm -t slows down across it.
