Ok, I see you didn't get the point... "working copy" is being used here
on SCM context. If you keep the source code of your system on an
repository a la FreeBSD ports or Gentoo portage, you would benefit from
such "build-outside-source-dir" feature to keep your working copy (the
checked out tree) clean from compiled files.

Another situation (maybe common on the cross-lfs land?): You compile for
multiple targets (not necessarily all of them being different archs) in
parallel, with the partition where the sources are located NFS mounted.
Instead of having a separate extracted tree for each target (wasting
space with duplicated data), all targets compile from the same clean
source tree.
