On another system I have, I do not 'insmod part_gpt' at all and it boots fine. It appears to do that automatically, if needed.
A quick look at what you put shows that you seem to not specify the modules I insmod.
I put them at the top and load them unconditionally, not within the menuentry. Same with set root. Makes the menuentry a one-liner.
