If you want to build LFS on a NewWorld apple (other than a G5) it should just be a matter of replacing grub by mac-fdisk
I use Gnu parted instead of mac-fdisk. It is able to read Mac partition maps and comes with a lot of other cool functionality. Also, I seem to recall from the last time I went hunting for info that mac-fdisk isn't being maintained - but I (or someone) should verify that.
