 Use the LFS-6.1 book, it's the current stable release with the
2.6.11.12 kernel.  As you imply, using an earlier kernel is not usually
a good idea.

 You might want to search the archives at search.linuxfromscratch.org -
I think I remember people having problems with knoppix (possibly, old
versions, or possibly from the options in the knoppix kernel).  Why not
try the LFS live CD ? (http://www.linuxfromscratch.org/livecd/)
