Yes. Of course when you restart, you need to remount all your partitions for the new lfs.

When you get to chapter six, you must also redo the following sections:

6.2. Mounting Virtual Kernel File Systems
6.3. Entering the chroot environment
and lastly
6.8. Populating /dev

It sounds like a lot, but cut/pasting it goes quick. I don't think I have forgetten anything, so hopefully someone else will chime in with more info.

yes, it is possible to do it in stretches, I've built a a couple of LFs systems like this (most of the pc's i own are running LFS) and quite a few of them were built in stages as time allows.

personally, i found it easier to just leave the machine turned on in a quiet corner, rather than go through re-mounting/chroot each time i want to work on it. i tend to find it serves as a little reminder/motivation too, and it means you can set off the huge compiles and leave the machine working whilst you get on with things like sleep ;)

as Justin said, if your doing it in stages, its very important to make sure you go through the correct mounting and chrooting sections prior to continuing, if you switch off the machine between stretches.
