You don't have to chown the directories if you followed the book's directions in the first place. You need to do all of chapter 5 as the lfs user as instructed in the book. Of course if you've already gotten this far then it should probably be enough just to go ahead, chown the contents of $LFS/tools to the lfs user, and continue as the lfs user.
