Hi,
I*m not an expert in things like installers and gtk, but as far as I  
know, the debian-gtk-installer and ubiquity are based on dpkg, the  
debian package managment. Anaconda should be the same with rpm.
After the partitioning thing, these programs just use the package  
managment to install software.
An easier way would be to write a script that creates your lfs-system  
automatically after getting some information about your needs. You  
might want to modify a ALFS version for this. You could then write a  
gtk-app, that gives you a graphical interface that just creates forms  
to enter the information you need for the installation and has buttons  
that execute certain parts of the script.
