I generally set a custom local version:
General Setup -> Local version - append to kernel release
something like -lfs-svn-20160718
Otherwise the book says what you should check. See Section 8.3 of LFS.
As you add packages from BLFS, there are several that need special
settings depending on what you need. At the bottom of the BLFS index is a
list of packages that recommend kernel settings.
Generally I try to go through the device drivers and unset those that I
know I don't need. The kernel tends to enable a lot of ethernet/wireless
network drivers by default.
It is an interesting exercise to try to build the smallest kernel you can
that fulfills your needs.
