That rings a vague bell, but I don't recall what caused it, nor how
I would have written it up in my notes (searching at the moment for
'text', but it doesn't seem to be among those matches).

I've a feeling that it was a gtk3 issue (that would cover both those
applications).

If you have changed themes, maybe it is a font problem.  My current
_/.config/gtk-3.0/settings.ini *seems* to work on this machine where
firefox is using gtk3 (I don't have gnumeric nor xfce4-terminal). I
don't have NotoSans installed (so that should just fall back to Sans,
i.e. DejaVu Sans) :

gtk-font-name=Noto Sans 10
gtk-theme-name=Adwaita
gtk-icon-theme-name=Adwaita
gtk-fallback-icon-theme=gnome
gtk-toolbar-style=GTK_TOOLBAR_ICONS
