The best entry point are the examples in the doc. For your purpose check out 'decoding_encoding.c'.
Another good tutorial is this http://dranger.com/ffmpeg/ffmpeg.html <http://dranger.com/ffmpeg/ffmpeg.html> . But be careful, it's a little bit out of date ;) You'll have to read the frames out of your mp4 file. Decode them, encode them and then write them back into the mp3 file.
