Because you might have headers installed in non standard directories,
for example homebrew.

Headers in non-standard locations can also be handled via
--extra-cflags/extra-ldflags. So for this particular case, it's just a
case of "I'm more familiar with this method, than the existing one, so
let's change it (for everybody)". I'm not saying changing it is wrong/bad
- pkg-config is great for a number of things - but it's nice to know the
exact motivation, i.e. personal preference (but no technical advantage),
consistency, or technical advantage (dependency libs). So yes, please
mention the motivation, and don't make it sound like headers in
non-standard locations is impossible without pkg-config.
