Another ffmpeg newbie here.
I'd also love to see more detailed documentation and user guides.

I'm sure this would increase the number of users and possibly also the number 
of contributors to the project.

I can recommend checking the doc folder in the source code.
It contains examples for the most common use cases.
I found it a good starting point at least for what I was shooting for.
