Quick update - success! I'm now running two 1920x1200 external monitors, one via DisplayPort -> HDMI, the other via VGA.
Damien put me on to `arandr`, which seems to be more powerful than the Gnome "Display" tool. Can't seem to activate the internal monitor in this configuration - get an error "xrandr: cannot find crtc for output LVDS1". Not that I want the internal monitor active anyway.
