A bit more investigation suggests that the problem is related to the following

1. OpenOffice and LibreOffice are particular about not embedding proprietary
fonts in PDFs - and instead substituting others. So, if you use Helvetica,
you'll find that the PDF has Arial embedded in it.

2. I have a second version of Palatino with a different character encoding (for
historical reasons) so this is used instead in PDFs.

Now, in the past, whatever LibreOffice did with printing was the same as what
was on the screen, while the font substitution only happened with PDFs, but we
now seem to have font substitution in both cases. It may be some side effect of
the fact that I'm printing via CUPS on a printer attached to to a different
computer.
