Single underline has Ctrl + U assigned. It is visible when hovering over the
toolbar button. However, it is not shown in the menu, which is a known issue
but was closed as "won't fix" in bug 138517 because of some roadblock.

It has been requested before, but because of the lack of available keybindings,
it has been decided to not add one because it's not used as often as the others
-  in favour of user-customisation as needed. See bug 64849.
Same would go for double-strikethrough, in my opinion.

So closing as "not a bug", hope that makes sense. Hopefully the Customize
dialog allows you to set it up exactly as you want it.
