I miss the requirements to reproduce, but figured this is about Tools >
AutoCorrect > Word Completion I see "Enable word completion" which is active.

So switched language to german, typed "Ermächtigen" a few times and found it
added to the list of "Collected Words". Typed "Erm" and was offered
"Ermächtigen" which I was able to AutoComplete by pressing enter.

The complaints from the original report:

"When typing "Grü" two thing happen, that are unexpected. I dont get a
suggestion, but the letters get replaced no matter how. I get "Grndungsjahr".

"Besides sucking away umlauts"

"It does not add a space after completing any longer."
REPRO, despite the option to "Append Space" this is not done when
autocompleting a suggestion in document. I filed
https://bugs.documentfoundation.org/show_bug.cgi?id=163633 to keep things
focussed and stick to the one issue per bug rule.

Please re-test and if any other issues remain for you, do report back.
