For Writer it is requested to use the respective character styles (Bug 108170 - Hyperlinks don't highlight 'Internet Link' entry in character styles list), in Calc you cannot change links at all (Bug 156849 - can't overwrite auto-applied formatting of Calc hyperlinks (underline, font colour...), and the same is true for Draw/Impress (Bug 108180 - Hyperlinks in Impress/Draw dont have underlines). Tools > Options > Application Color allows to overwrite the system settings, typically blue, with any other color. Links in Impress follow this setting, despite it does not known whether it has been clicked. Insert > Audio or Video... adds an icon or a preview from the video.
