Tested this:
Opened the database browser, set the data format of a date field to a format I
normally won't use. Took the table header and pushed it to the writer document.
A field for mail merge has been created.
Printed this page.
Data will be formatted as I have defined.
Close the connection and the Writer document.
Opened the Writer document again and printed the page.
All pages will show date as it has been formatted by me.

One hint:
Properties of a field will only be saved for tables and views, not for queries.
You could change the properties for queries but with every reload of the query
you have to change it again.
