I have no problems to change font related properties in an Impress template
file. Perhaps you do something wrong? Please discuss the problem on Ask (e.g.
https://ask.libreoffice.org/c/english/5)

Here some hints:
A presentation contains "presentation objects". That are the fields for title,
subtitle, date/time, footer, page number, outline. The properties of these
fields are not set in the group "Drawing Styles" but in the group "Presentation
Styles" in the sidebar. A "row in the hierarchical list" is called "Outline 1",
"Outline 2"..., depending on the list level.

If you are working on a slide, changing a property of these fields in the
sidebar changes the property in the master slide that is currently associated
with this slide. It has the same effect as if you would change the property in
this master slide itself.

If you will use direct formatting for these fields on a slide, that will
overwrite the settings from the master slide. You will need to remove the
direct formatting to make the settings from the master slide active. To remove
direct position or size changes, you have to reassign the layout.

All other objects on a master slide are always styled in "Master Slide" view.
